From Mango mint to Gingerbread for the holidays! As a Dutch native, the American name for this cookie is still very weird to Dutch people! The orginal name for this recipe is Buttercookie! A real Dutch butter cookie should be soft and chewy! Some pastry shops or bakeries sell very hard butter cookie cakes. Customers always looking for the chewy butter cake cookie. This recipe is all about soft and chewy

For our chewy butter cookie cake vanilla recipe, you don’t need much ingredients. Also this is one of the easiest baking recipes of all times. For this recipe I am using our Kitchenaid standmixer with paddle. I am mixing all ingredients on low speed. This recipe don’t never over mixing. There is only 3 parts to follow. Butter and sugars goes first. Then flour mixed with coarse salt. At last milk and egg wash. All these ingredients make a thick and sticky dough.



Almost ready for baking

There are two ways to bake this recipe. For take away orders, I am baking chewy butter cake vanilla in a foil cake pan. there is another way to bake this recipe. If you have a springform regular size baking pan, you can one as well! Butter the bottom and sides  of your baking pan and fill this with dough. the top of the dough needs egg wash (not too much!) and the last part is to create a raster pattern. For this I am using a fork and keep it flat! I draw horizontal and vertical lines in the dough. Decorating chewy butter cookie cake with almonds is optional. This recipe is ready for the oven!



 After baking

When the butter cookie cake comes out of the oven, I let it cool off for hours. That’s why I bake this recipe in the evening and let it cool off over night. That is what it makes chewy!  When you cut this cookie in parts when it is still warm, this cookie becomes less chewy! That’s why I let it cool off overnight.   • 2 tsp vanilla extract
  • 2 sticks + 4 tsp of butter (room temperature)
  • 1/2 Cup white caster sugar
  • 1/2 Cup granulated sugar
  • Pinch of salt
  • 2 Cups all purpose flour
  • 1 tbsp of milk
  • 1 tbsp whisked egg (Use the remain part for brushing the cookies on top)
  • almonds (optional)


  1. Mix a pinch of salt with all purpose flour with a fork and leave the bowl a side.
  2. Mix on medium speed butter with vanilla extract, caster sugar and granulated sugar until smooth..
  3. Mix the flour in 3 parts with the butter/sugar mix on medium speed. Make sure you don't over mix this dough too much or on high speed. It should be rather on low speed than high speed.
  4. Add 1 tbsp of milk and 1 tbsp of whisked egg and mix this until incorporated.
  5. Use a foil round cake pan and brush the bottom and sides with butter.
  6. Pre heat your oven on 350 degrees/ 180 celsius
  7. Fill your foil pan with cookie dough and brush the top of the dough with egg wash.
  8. Use a fork and make horizontal and vertical lines. (keep your fork flat!)
  9. Bake chewy butter cookie cake Vanilla in 30 minutes.
  10. When the chewy butter cookie cake comes out of the oven. Let it cool off! Don't cut in your butter cookie cake when it is still warm! When you do, your butter cookie will be less soft and chewy!
