Mini apple pie deluxe recipe

Mini apple pie deluxe recipe is my first apple pie blog online. This is a medium size pie with buttersauce. When this pie is ready, I cut this apple pie in 4 pieces! My standard Dutch apple pies contain Vienna dough. This apple pie does not need special treatment dough like Vienna dough. When this dough is ready, you can start this recipe right away! I recommend for this recipe pastry flour (type 00 flour) and butter. Over the years I have baked so many apple pies and different type of apple pies. My apple pies are Dutch style which means, you need good quality of butter and flour. For this recipe you need a 7 inch ring without bottom. These rings don’t look like the regular springform baking pans. When you can find a 7 or 8 inch ring, this recipe will fit perfect!

Before I start preparing a recipe, The most important thing is to get the ingredients together. With that I cannot miss an ingredient, then I weigh or measure everything. Over the years of baking, this became my kitchen rule number one. For this recipe I am not using a mixer, only my bare clean hands! (When you prefer a mixer, mix on low and medium speed! see recipe). Mini apple pie deluxe recipe needs a rub dough treatment. Which means, I can use butter on room temperature. This is my only apple pie recipe with room temperature butter. Before I start with preparing dough, I mix flour with a pinch of salt and whisk this with a fork. Then I am start kneading butter with sugar, lemon, lime zest, eggs and vanilla extract. The second and last part is kneading flour with butter mix!

All my apple pies are a mix of Jonagold apples, mixed raisins with cranberries on Calvados brandy. This gives my mixed raisins with cranberry a special flavor. The last part is to flavor my apples with raisins and cranberries. For this I am using Dutch apple pie spices. During the years I have created this mix on my own and it smells like gingerbread. In the future our catering service will offer Dutch apple pie spices online. For this recipe you can use cinnamon.

Baking Mini apple pie deluxe

After I have finished apple pie filling, I will mix this with butter sauce. This makes apples and raisins more soft and creamy! Butter sauce is a mix of melted butter wit egg yolks, cornstarch and sugar. The last part is to use make a flat piece of dough (1\2 inch thick) and fill the ring with dough. The bottom of the dough needs almond flour or bread crumbs. This is to absorb the butter sauce. Then I can finish the pie with apple pie mix. On top  I brush the apple cubes withs apricot jam and I am baking Mini apple pie deluxe recipe in 25 minutes!

When the apple pie comes out of the oven, I let it cool off until room temperature. In Europe people eat apple pie with sweet whipped cream. Ingredients:

  • Ingredients butter dough
  • 250 grams pastry flour (or type 00 flour)
  • 100 grams extra fine granulated sugar
  • 100 gram butter (room temperature)
  • 1 egg (medium size)
  • 1 egg yolk
  • Pinch of coarse salt
  • 2 tsp of lemon zest
  • 1 tsp of lime zest
  • 1 tbsp of almond flour or bread crumbs
  • 1 tsp of vanilla extract
  • Ingredients Apple pie filling
  • 40 grams of butter (melted)
  • 60 grams extra fine granulated sugar
  • 2 egg yolks
  • 10 grams cornstarch
  • 3 Jonagold apples
  • 3 tbsp mixed raisins on Calvados
  • 1 tsp of cinnamon
  • 1 tbsp of lemon juice
  • Ingredients topping
  • 1 tbsp water
  • 2 tbsp apricot jam
  • 1/2 tbsp jemon juice
  • 1 granny Smith Apple cut in thin slices
  • 1 tbsp confectioner sugar

Directions:

  1. Instructions dough
  2. Mix a pinch of salt with flour and whisk with a fork until combined. Mix on low speed flour with 1 egg and 1 egg yolk until it starts to incorporate.
  3. Add 100 grams butter and 100 grams of sugar. Mix on medium speed with 1 tsp of vanilla extract, 2 tsp of lemon zest and 1 tsp of lime zest.
  4. Use a 7 or 8 inch banking ring and brush inside with butter! Use a rolingpin and make a flat piece of ½ inch thick! (this dough recipe is good for 2 mini apple pie deluxe recipes) When you have dough left, put it in the freezer! Or bake another pie.
  5. Before your put the dough in the ring, Use parchment paper or silicone baking mat. Put the ring on top of this. Then you can cover the ring with dough. Pinch with a fork holes in the bottom of the dough and cover this with 1 tbsp of almond flour or bread crumbs.
  6. Instructions Apple pie filling
  7. Pre heat in a sauce pan 40 grams of butter with 60 grams of extra fine granulated sugar until it has been melted. Take it off the stove and whisk 2 egg yolks and cornstarch until you have a smooth butter sauce.
  8. Peel 3 Jonagold apples and mix this with 1 tbsp of lemon juice. Cut the apples in cubes. Add 3 tbsp of mixed raisins on Calvados and 1 tsp of cinnamon Mix this until combined with a large spoon.
  9. When the apples cubes and mixed raisins are incorporated. Mix this with butter sauce. This is your apple pie filling. Cover the baking ring with your apple pie filling. (Use everything)
  10. Pre heat your oven on 350 degrees or 180 celsius.
  11. Bake Mini apple pie deluxe in 25 minutes!
  12. Mix in the meantime 2 tbsp of apricot jam with 1 tbsp warm water. When the pies comes out of the oven, brush the top with apricot jam.
  13. Cut 1 Granny Smith apple in thin slices. Use ½ tbsp of lemon juiceand mix with apple slices. This prevents coloring. Decorate apple slices on top of the pie and dust the top of the pie with 1 tbsp of confectioner sugar. (You can use a strainer for this) Your Mini apple pie deluxe is ready!

Notes

You can use regular raisins for this recipe. Please soak your raisins in hot water first and leave them in a strainer for about 15 minutes! Besides Jonagold apples, you can use other apples which are good for apple pies.
