This recipe isn’t difficult to make at all. Because the holidays are coming, I have added speculoos spices to the dough. Speculoos is Dutch gingerbread spices for many baking recipes.

Prepare butter cake

Speculoos Dutch butter cake is a short mix and low speed recipe. This means, you need all ingredients on room temperature and mix until you have a smooth dough. When ingredients are on room temperature, you can mix this less than a minute! Butter, sugar, vanilla extract,eggs and speculoos spices goes first., then flour and salt. When you have a smooth dough, then you can use a baking pan. Brush your baking pan and cover with parchment paper first.

Baking pan for Dutch butter cake

In the Netherlands and Belgium, there are original butter cake pans with a blade at the bottom. With this special butter cake pan you can easy remove butter cakes with this blade. The other alternative is using a springform cake pan. These type of baking pans come in several sizes, but when you have a regular size (9 inch), that’s the correct baking pan for this recipe. It doesn’t matter when a springform baking pan is round or square sized, For take a way, we use disposable foil baking pans. You can use these pans too! Brush the bottom and sides with butter without parchment paper.

Baking butter cake

When you bake Speculoos Dutch butter cake or any other butter cakes, make sure you have a pre heated oven. 350F/175C Is the right temperature and put your oven rack at the lowest section. Baking time is 26 minutes for Speculoos Dutch butter cake recipe. When your butter cake comes out of the oven, make sure you butter cake is on room temperature! Then you can remove your butter cake or cut with a knife. When butter cake is still warm, you will see this cookie becomes hard. Another tip is bake this recipe an evening before use. Ingredients:

  • 250 grams/ 2 sticks + 1 1/2 tbsp butter (on room temperature)
  • 110 grams/ 1/2 cup + 2 tsp of extra fine granulated sugar
  • 110 grams/ 1/2 cup + 2 tsp of white caster sugar
  • 1 egg ( whisked)
  • 2 pinches of coarse salt
  • 250 gram/ 1 cup + 5 tsp all purpose flour
  • 15 ml/ 1 tbsp milk
  • 1 tsp vanilla extract
  • 1 tbsp Speculoos spices

Directions:

  1. Mix on low speed 250 grams butter, 110 grams of extra fine granulated sugar, 110 grams of white caster sugar, 1 tsp of vanilla extract until incorporated
  2. Add 1 tbsp of speculoos spices and ¾ of a whisked egg. ( The little part is for brushing butter cake on top!)
  3. The last part is to add 250 grams of flour and 2 pinches of coarse salt. Mix all ingredients on low speed until incorporated and your butter cake dough is ready!
  4. Brush the bottom and sides of your baking pan and cover with parchment paper. (When you use a disposable foil pan, please do not use parchment paper! Only brushing with butter)
  5. Fill your baking pan with butter cake dough and brush the top smooth with the ¼ part of whisked egg. Use a fork and make a raster on top. Keep your fork flat and low and draw these lines horizontally and vertically.
  6. Bake your Speculoos Dutch butter cake in 26 minutes and let it cool off to room temperature. Your Speculoos Dutch butter cake is ready!
