Avocado lime salad

This salad recipe is what we use often. Avocado lime salad is a fresh and healthy salad with avocado in lime juice. For this salad you can use Romaine or ricola lettuce or any lettuce of choice! This salad fits in plenty of diets and is light food with low carbs. Before we start with this salad, we prepare our dressing first! Our dressing for this recipe is with olive oil, vinegar, fresh ginger and mustard. When you shake well before use, you can mix this first through your lettuce.

For this recipe you can use bags of lettuce of fresh lettuce. For this recipe we use Romaine which is already rinsed in a bag. We rinse our romaine lettuce before use!

Mediterranean touch!

We give our Avocado lime salad a mediterranean touch! We add mixed olives, feta and sundried tomatoes to the bowl. As well we are using hard boiled eggs! In combination with our homemade dressing, this is a great salad. So whenever you are on a diet or have to eat low carbs, this salad is low in calories! The avocado in combination with eggs is healthy! You will get unsaturated fats which is good for the heart

Avocado lime salad and wedges

When you are on a diet or not, there are times you want to treat yourself with a tasteful meal. For our catering business we serve this salad with spicy potato wedges! This meal comes with a lime dip. Avocado salad with potato wedges or fries is a meal we sell often when it is summer. This is an impression how you can mix and match salad with fries or other potatoes. This meal is still vegetarian with more calories.

Ingredients:

    Ingredients Avocado lime salad
  • 18 0z Romaine salad bag
  • 1 avocado
  • 1 lime
  • 1 red onion
  • 7 green olives
  • 7 black olives
  • 5 sundried tomatoes
  • 2 hard boiled eggs
  • 6 oz feta cheese
  • Dressing
  • 6 tbsp olive oil extra virgin
  • 2 tbsp red wine vinegar
  • 1/4 tsp black pepper
  • 1/4 tsp sea salt
  • 1 tsp mustard
  • 1/2 lemonzest (use 1/2 lemon)

Directions:

    Making dressing
  1. Mix all ingredients of the dressing at once. Whisk or shake well until you have a yellow dressing. Keep the dressing on the side until the salad has been mixed.
  2. Making salad
  3. Rinse an 18 oz of Romaine salad bag in a colander and let it drain for about 15 minutes. In the meantime you can work on the other ingredients.
  4. Peel one avocado and slice. Press one lime into juice and pour this over the sliced avocados in a container.
  5. Slice 1 red onion, chop black and green olives, slice sundried tomatoes and slice feta cheese in parts.
  6. Mix these ingredients with salad in one salad bowl. Now you can use the dressing and mix well.
  7. Decorate on top of the salad parts of hard boiled egg. Your salad is ready!

Notes

You can use any lettuce of choice. For this recipe we use Romaine salad or ricola.
