Creamy French deviled eggs

Whenever you go to Paris, France or any other city in France, you must try Creamy French deviled eggs! This is one of the best appetizers on any menu in a bar or restaurant. People order this for brunch, lunch or dinner. When people enjoying their visit on a terrace at a bar, people order these eggs with wine. This recipe is French and authentic! We have doing some searching around and see that most French deviled eggs are not coming close to the basic. The French style is not with mayonnaise, it is with buttercream!

In this recipe blog I will show you how to make authentic French deviled eggs! There are only a few kitchen tools you need for this recipe. Use a handmixer, piping bag with star nozzle, strainer and spatula. Because this is a recipe of a dozen of eggs, I do advice you not to use a standmixer!

Fluffy butter cream

French style deviled eggs comes with buttercream! For this recipe you need good quality of butter on room temperature. Also you need heavy cream. When you mix these two ingredients you will see after 4 minutes this becomes light and fluffy! It isn’t necessary to have heavy cream om room temperature! Cold cream goes well with butter on room temperature! Please take notice! When you mix on highspeed, use your spatula to scrape the butter to the middle. You won’t see parts in the buttercream which are not fluffy!

Decoration toppings

For this recipe, it is important to use a piping bag with 9 mm star nozzle. This gives cream a nice shaped look! Besides stuffing all these shells, these eggs need some decoration on top! You can use fruits, fish or pieces of bacon. When you push these toppings in the middle of the egg, you will have a nice presentation of stuffed eggs. the most common fruits are raspberries, blackberries and canned tangerines. When you decide to use fish, any smoked fish or shrimp will give these eggs a better flavor!

Serving Creamy French deviled eggs

When you finished decorating these stuffed eggs, you can serve them on your platter! don’t refrigerate these eggs first to chill. Remember, these eggs contain buttercream! This means, when they are cold, the egg yolk filling will be hard to eat! When you decide to make them some time earlier, store them in the refrigerator.   • 12 large free range eggs (hard boiled)
  • 2/3 cup (150 grams) butter on room temperature
  • 1/2 tsp coarse salt
  • 1/2 tsp ground white pepper
  • 1 tsp curry powder
  • 1 tsp worcestershire sauce
  • 3 tbsp heavy cream (unbeaten)
  • Decoration toppings
  • Canned tangerines
  • Cocktail cherries
  • Fresh raspberries
  • Fresh blackberries
  • Chunks of smoked fish
  • Parts of anchovies
  • Diced shrimp or small shrimps with mayonnaise

  1. Boil in plenty of water 12 large free range eggs. When water starts to boil, set your timer on 11 minutes!
  2. After boiling rinse these eggs with cold tab water and let them stay for about 5 minutes. In the meantime you can start mixing on highspeed butter and heavy cream.
  3. Use a large stainless steel bowl and mix on high spead 2/3 cup of butter on room temperatur with 3 tbsp heavy cream. Use a spatula and during mixing, push the accessive butter to mixer. Mix for about 4 minutes!
  4. Peel each egg and cut these eggs horizontally and remove the egg yolk from each egg. Leave these egg yolks in a strainer!
  5. Push these egg yolks through a strainer above buttercream mix. You can use a spoon or thumb to push these eggs through a strainer.
  6. Mix for another 30 seconds on highspeed. These sifted egg yolks are mixed with buttercream! Add 1/2 tsp coarse salt, 1/2 tsp ground white pepper, 1 tsp curry powder, 1 tsp worcestershire sauce to the batch and mix for another 30 seconds on highspeed. All ingredients are incorporated. Use a spatula and fill a piping bag with 9mm star nozzle.
  7. Fill each egg white shell with deviled egg cream and use one of this decoration toppings on each egg. these creamy French deviled eggs are ready to serve!


When you decide to refrigerate these eggs, make sure they are 2 hours before use on room temperature! After finishing recipe they don't need to chill. They are ready for serving. Use free range eggs for this recipe! Select fruit or fish parts as decoration toppings.
