Crispy cajun shrimp

One of the best Lousiana shrimp recipes is Crispy cajun shrimp. For this recipe we use large cooked shrimps. These are the best shrimp for this recip! Most of the time we use shrimp from Argentina or langoustine shrimp. For this recipe you can also use raw shrimp. Make sure they are not the smallest shrimp. When you remove the shells and tails, the last part is to remove the black veins.

I rinse everything one more time and dry each shrimp with kitchen towel. Then it is time for a tempura batter. For this recipe I use gluten-free tempura with carbonated cold water. When this batter isn’t cold enough, I am adding 2 more ice cubes to the batter. Tempura batter shouldn’t be too thick or too thin! A good smooth batter makes your shrimp crispy! When you dip each shrimp after tempura batter into panko breadcrumbs, they are CRISPY!

After cleaning shrimp, it is time to make a smooth tempura batter. It isn’t necessary to make your own batter from scratch! In stores you can buy tempura flour. The only thing you need is ice cold water and whisk until smooth! For this recipe I am using carbonated water with two ice cubes. The batter remains cold during frying a batch of shrimp. When I am finished with the batter, I take an extra medium bowl with Panko bread crumbs. My Panko goes for five seconds in a small food processor to structure Panko more.

Frying shrimp

So when I have my tempura batter and Panko bread crumbs ready, it is time to role! I dip one shrimp at the time into my tempura batter. Right after that I dip shrimp all the away around into Panko bread crumbs. When this is all done, the breaded shrimp kan rest on a plate. I repeat this until I have done my whole batch of shrimp.  Now it’s time to fry, so I pre heat my stir fry pan to 340F/180C

Per batch I am frying about 10 to 12 shrimp at the time! During frying I keep flipping each shrimp every other minute. This is to prevent burning Panko bread crumb. They are ready when both sides of the shrimps are golden brown of color. I am using kitchen towel to drain excessive oil and season shrimp with cajun seasoning.Now they are ready to serve with hotsauce or cocktail sauce.

Ingredients:

  • 2 1/2 lbs cooked large shrimp (or langoustine shrimp)
  • 1 tbsp lemon juice
  • 2 cups tempura flour
  • 3/4 cup carbonated cold water
  • 2 ice cubes
  • 2 tsp cajun seasoning
  • Sun flour oil

Directions:

  1. Rinse 2 1/2 lbs large cooked shrimp with lemon juice. Remove the veins and dry each shrimp with kitchen towel.
  2. Use a bowl and make a smooth batter with 2 cups of tempura flour and 3/4 cup of carbonated water. When. The batter is too thick, add more carbonated water. Do this in small amounts until you have a smooth batter. Smooth batter Isn’t too waterly or too thick. It is somewhere in between. Panko bread crumbs should stick to the batter.
  3. Take 2 cups of Panko bread crumbs. You can blend this for 5 seconds in a small food processor. This is optional. When don’t like fine structure, just use Panko the way it is.
  4. Pre heat sunflower oil until 340F/170C and fry about 10 to 12 Panko coated shrimp until golden brown of color. During frying, flip each shrimp several times. Repeat this until you have fried each shrimp.
  5. Lay each shrimp on a piece of kitchen towel to drain the excessive oil. Then season all shrimp in a bowl with 2 tsp or 1 tbsp with cajun seasoning.
  6. Serve these Panko breaded shrimp with hotsauce, ketchup with horseradish or cocktail sauce.

Notes

Tempura flour is for sale in many grocery stores or Asian grocery stores.
