Throughout the whole year we are testing appetizers for all occasions. Deviled cucumber appetizers are a vegetarian snack with a fresh touch of cumcumbers. These appetizers do well at cocktail hour, wedding receptions and much more! For this recipe we use free range eggs for our stuffed eggs. This recipe is easy and within 25 minutes ready to serve.

For this recipe, it is important to use fresh cucumbers. You can choose for yourself if you like peeled cucumbers or with skin. When you use with skin, you will see slices of cucumbers will be less liquid and better to serve on a plate.

Deviled egg cream


For this vegetarian appetizer recipe, we are using French deviled egg cream. This is easy to make and we flavor this cream with curry powder. There are plenty of curry powders, but for this recipe it is best to use a mild version. Also be careful with the amount of curry powder! When you use too much curry powder, this appetizer will be over flavored! This cream has a light flavor of curry and the cucumbers gives a fresh taste!

Finger food decorations


For these cucumber appetizers, you can use several ingredients for decoration. When you decorate each slice of cucumber, you can use a piping bag for deviled egg cream. The type of nozzle is always of choice! For this recipe we use a 9 mm star nozzle. On top of the cream you can always use mayonnaise, ketchup or both! With that we finish each appetizer with a string of fresh dill herbs. Canned tangerines is another option or olives.

Besides vegetarian, we do serve these with fish on top as well. For this recipe we use smoked mackerel fish or smoked salmon. These cucumber bites comes with healthy omega 3 fats. Deviled cucumber appetizers

Ingredients:

  • 2 cucumbers
  • 12 free range eggs
  • 4 tbsp heavy cream
  • 1 stick + 2 tbsp (145 grams) butter on room temperature
  • 2 tsp mustard
  • 1 tsp coarse salt
  • 1/2 tsp ground white pepper
  • 1 tsp curry powder
  • 2 tsp granulated sugar
  • 2 tsp Worcestershire sauce
  • Decoration
  • Mayonnaise
  • Ketchup
  • Fresh dill herbs
  • Smoked salmon
  • Smoked mackarel fish
  • Canned fruit

Directions:

  1. Make sure you have 12 hard boiled eggs up front which are on room temperature! Peel each egg and put every yolk into a strainer. You can throw away the egg white shells.
  2. Use a handmixer and mix on high speed 1 stick + 2 tbsp of butter on room temperature for about 1 minutes and 30 seconds. Mix until the butter is soft and white of color!
  3. Add 4 tbsp of heavy cream to the butter and mix for another 30 seconds!
  4. Take the strainer with egg yolks and push each yolk into the butter batch. You will see you get mashed egg yolks. Mix this until incorporated.
  5. Give these deviled egg cream some flavor with 2 tsp Worcestershire sauce, 1 tsp coarse salt, 1/2 tsp ground white pepper, 2 tsp granulated sugar, 1 tsp curry powder and 2 tsp mustard. Mix this for another 30 seconds until all ingredients are incorporated.
  6. Put this deviled egg cream in la piping bag with nozzle of choice!
  7. Rinse 2 cucumbers with water and dry them with kitchen towel. Cut the front and the end, then slice them. Each slice should be about 1/2 inch thick!
  8. Dry the top of each cucumber slice with kitchen towel and press deviled egg cream on top of each slice of cucumber.
  9. Decorate the top with fresh dill, mayonnaise, ketchup or parts of fruit.
  10. You appetizers are ready to serve!

Notes

When you store these appetizers in the refrigerator, deviled egg cream becomes hard because this contains butter! Serve this snack always on room temperature!
