Dried fruit Dutch easter bread

It is almost easter holiday and for breakfast and brunch we bake dried fruit Dutch easter bread. This bread contains higher level of protein with instant dry yeast. The additives for this bread are raisins, candied peel, dried fruits and cherries. You can combine this recipe as well with hazelnuts or any other nuts of choice. For this recipe we are using amarena cherries with a litte cinnamon twist.

Dutch and German Easter bread come with almond paste. When this is too sweet for you, you can bake this without almond paste. At the end of our blog, you can find our recipe for this. The best thing is to prepare this one week in advance and you can store this in the freezer as well until use.

Prepare ingredients

When you start baking dried fruit Dutch easter bread, please collect your ingredients. When you do this first, you won’t forget anything. For example, raisins and dried apricots need a hot water bath first. With this you can soak these two ingredients for about 15 minutes and put them after this in a strainer. Give this plenty of time to dry and you will have the best soaked fruits.

When you prepare bread dough, you can use instant yeast. Please check up front if your instant yeast is still active and not expired. See when the date is still valid and your yeast starts to work when you add warm water to your flour and yeast. You will see the dough becomes more puffy and make sure salt comes at last. Salt and yeast don’t work together! So you need to use instant yeast first. Please check the instructions of this recipe first.

Dough on the rise

When you have mixed the dough pretty well, you need to let it rest for atleast 1 hour in a dark warm place. The dough has plenty of time to rise and becomes more puffy! After 1 hour, the dough needs a little extra kneading and it needs to rise again. The dough goes into a bread baking pan and rise this for another 20 minutes. In the meantime you can preheat your oven.

Baking time for dried fruit Dutch easter bread is only 30 minutes. You will see this bread is nice in shape because the bread baking pan. Brush on top liquid butter and sprinkle with powdered sugar.   • 350 grams (2 1/2 cups) flour (protein level 12% max 15%)
  • 175 ml(3/4 cup) whole milk (40 celsius/ 105F)
  • 2 1/2 sachets of instant yeast
  • 35 grams or 2 1/2 tbsp butter (room temperature)
  • 7 grams/ 1 tsp coarse salt
  • 1 medium egg (whisked)
  • 35 grams or 3 tbsp light brown packed sugar
  • lemon zest (1/2 lemon)
  • orange zest (1/2 orange)
  • Easter bread filling
  • 6 soaked apricots (chopped)
  • 1/3 cup mixed candied peel
  • 1/3 cup chopped hazelnuts or hazelnut praline (see recipe links)
  • 10 candied cherries or Amarena cherries (cut in half)
  • 3/4 cup soaked mixed raisins
  • 1/2 tsp cinnamon
  • 1/3 cup chopped candied orange

  1. Make sure all ingredients are on room temparatuur except whole milk. Pre heat milk to 40C/105F. Use a mixer with dough hooks and start mixing 350 grams or 2 1/2 cups of flour with 2 1/2 sachets of instant dry yeast with warm milk for about 3 minutes on low speed.
  2. add 35 grams or 3 tbsp of light brown packed sugar and 1 egg whisked. Mix for another 2 minutes.
  3. You are mixing 5 minutes now. Add coarse salt, lemon and orange zest. Mix another 3 minutes.
  4. At 8th minute add the bread filling like 1/2 tsp cinnamon, 1/3 cup mixed candied peel, 1/3 chopped hazelnuts, 6 chopped apricots, 10 candied cherries (halves), mixed soaked raisins and chopped candied oranges. Mix this for another 2 minutes.
  5. Use an used kitchen towel and cover the top of the bowl and put the Easter bread dough in a dark warm place. Let is rise for 1 hour.
  6. In the meantime you can butter a bread baking pan (oblong sized) and cover the sides with parchment paper.
  7. After 1 hour rising, mix the dough for another 3 minutes and put the Easter bread dough in the bread baking pan. Let this rise for another 20 minutes. (make sure after 10 minutes rising, pre heat your oven on 210C or 420F.
  8. Bake your Easter bread in 20 minutes. After baking, brush the top of your easter bread with liquid butter and use a strainer to dust powdered sugar on top.
  9. Let you bread cool off to room temperature, your dried fruits Dutch easter bread is ready for easter breakfast or brunch.
