
Dutch apple beignets
This is the end of 2017 and new years eve is coming! On new years eve we eat Oliebollen and Dutch apple beignets. This is a typical Dutch treat on new years eve. All street vendors are selling them only our catering service deepfry our own apple beignets! The most common is with cinnamon and sugar. We bake them as well with our own apple pie spices and they taste both delicious! Also we do a little extra! We cut the middle of the apple and fill this with almond paste and raisins. For our apple beignets we are using puff pastry. The other way is making a batter and dip thick apple slices and deepfry. We call these apple fritters!
Our customers prefer with puff pastry. After deepfrying we dip each apple beignet into a mixture of sugar and cinnamon. That’s an original Dutch apple beignets. For this recipe I am advising you to buy square sized puff pastry. When you use larger puff pastry sheets, you need to cut them on size yourself. This cost alot more work and the square sized are perfect for this recipe!

Apples
For Dutch apple beignets you need apples which are good for apple pies! For this recipe we are using a typical Dutch apple called golden reinnets. These apples are not worldwide for sale! You need to check which apple is suitable in your own country for apple pies. When you peel the skin and cut the middle part of the apple, sprinkle this with lemon juice.

Apple beignets in shape
You don’t need much for this recipe! A large round cookie cutter (4 inch/10cm) makes your apple beignet in shape. For this recipe you need 2 square sized sheets and the best thing to do is to use half frozen puff pastry. These sheets are easier to handle than when it is on room temperature. Also they stick better to each other with water. When both sides of puff pastry stick to each other, then they are ready for deepfrying.

Baking apple beignets
When all apple beignets covered with puff pastry, they are ready to deepfry. For this recipe, you need sunflower oil and make sure your oil is 190c/375F. Then you can deep fry your apple beignets until they are golden brown on both sides. This takes about 6 to 7 minutes. The best thing to do is to flip them every other 2 minutes. When they are ready put them with kitchen towel in a colander for about 15 minutes. Dip these apple beignets on both sides in a mixture of extra fine granulated sugar with cinnamon.
