During the spring and summertime we are preparing more salads. Ham potato salad is one of them. This is a potato salad with dijon mustard and good quality of ham. Not a regular ham from the grocery store. This is a ham coming from a butcher! We prefer Breydelham. This is a special type of good flavor ham from Belgium. We use the same ham for party croquettes with ham, cheese and endives. When you make this recipe, check out which ham is best in your area.

Another important factor for this salad is using potatoes with starch! The cooking method for these potatoes is something which need attention! Cooking with salt and less water is a must! We dry cook our potatoes and cool them off overnight!

Cooking potatoes

For Ham potato salad it is important to know which type of potatoes are best for a potato salad. Over the years I have seen people cooking potatoes and not knowing which type of potatoes they are using. And mistake number two is using hot potatoes! With that your potatoe salad becomes sticky and looks more like mashed potatoes. When your potatoes are still warm, don’t use mayonnaise or any other dressing! A good potato salad must have a bite and not taste like puree!

What most chefs do is boil potatoes one day in advance and cool off overnight! When you use less water and use cold potatoes. Your salad is easy to make and taste way better than when this is sticky! When potatoes are cold, it is easy to dice them and easy to mix with other ingredients. Also when you like to make a nice platter, You can dress this salad up and decorate.

Ingredients:

  • 2 1/2 lbs (1 kgs) potatoes with starch
  • 3/4 tsp ground white pepper
  • 3/4 tsp coarse salt
  • 1/2 tsp Maggi seasoning
  • 1/2 tsp worcestershire sauce
  • 4 tbsp fine chopped pickles
  • 3 large hard boiled eggs
  • 3 stalks of spring onion (diced)
  • 1 medium onion
  • 3 tbsp fine chopped parsley
  • Granny Smith apple
  • 3 tbsp fine chopped fresh dill
  • 1/2 lbs (200 grams) 1 slice grill ham (optional)
  • dressing
  • 4 tbsp mayonnaise
  • 2 tsp mustard
  • 1 tsp apple cider vinegar

Directions:

  1. Peel 2 1/2 lbs (1 kgs) potatoes with starch. Cut them in half and boiled them with 1 tsp of coarse salt. After boiling, remove excessive water and
  2. Let it cool off until room temperature (without lid).
  3. Dice each potato in cubes and prepare this in a large bowl. Season diced potatoes with 3/4 tsp ground white pepper, 3/4 tsp coarse salt, 1/2 tbsp Maggi seasoning, 1/2 tbsp Worcestershire sauce and 1 tsp of apple cider vinegar. Combine all these ingredients with a large spoon.
  4. Chop the following ingredients, 1 medium onion, 3 strings of spring onions, 3 tbsp fresh dill, 3 tbsp fresh parsley, 3 large hard boiled eggs.
  5. Peel one Jonagold or a Granny Smith apple and slice into cubes and cut ham in cubes. Add these ingredients to the salad and mix well.
  6. making dressing
  7. Whisk 6 tbsp of mayonnaise with 2 tbsp creme fraiche Culinair cream until creamy! Add 2 tsp of mustard and 1 tsp of apple cider vinegar. Whisk until combined. Add the dressing in 3 parts to the salad bowl until all combined. Keep the ham potato salad for 2 hours in the refrigerator until use!

Notes

Cook potatoes the evening before use! Vegetarian version, add no ham to the salad. Each portion is one cup.
