Mini crumble apple pie
After dropping our Mini crumble apple pie pins on social media, our followers got curious! These mini pies with butter vanilla streusel got a little famous! We have decided to share this recipe! These little apple pies are for many occasions! You can bake them for high tea, dessert, holidays or even birthdays. We get plenty of requests to bake these little pies for any occasion. For this recipe, we make our own streusel and flavor them with butter vanilla. Our streusel comes in different flavors, like almond, lemon, orange and even cinnamon.
For this recipe you need springform baking pans which are only 4 inches! These springforms baking pans are not everywhere for sale. You need to google them first where they are for sale! This size isn’t regular, but becomes more popular in the baking world. Kitchen or baking supply stores will sell them.
Vienna dough European pie crust
Our little apple pies are made with our own Vienna dough recipe. Vienna dough is European pie crust with lemon zest. This dough remains soft during baking and is soft when you eat this. For this recipe, we advise you to prepare the dough the evening before baking these pies. The lemon zest and vanilla have plenty of time to chill in the refrigerator. Chill time in the refrigerator for Vienna dough is at least 3 hours. Prepare this dough with cold butter and wrap the dough in plastic film.

As you can see, for this recipe we are using small springform baking pans. These springform pans are easy to bake European apple pies and other baking recipes. You can easy remove the ring and attach them to the bottom part of the ring. Make sure you brush the bottom part and ring with butter and cover with parchment paper (bottom part only!). The other alternative are 4 inch rings without bottom part. Brush the rings with butter and make sure you press with the same ring into the dough. That will be the bottom part! As you can see the dough should be not that thin and not too thick either!
Thin dough will break apple pies quick and thick layers of dough is too much either! 1/4 inch thick is perfect for any apple pie! When your little apple pies are ready, you will see how nice the outside of the pie looks
Steusel with flavor
We make alot of apple pies with different toppings. Some like regular dough top, but we also make apple pie with streusel. Our streusel comes with flavor! Most common are vanilla and lemon. For vanilla streusel we use butter vanilla extract and for lemon flavor, we use lemon zest. In Europe you see streusel which are light crispy, other parts of the world, streusel are thicker. For our Vienna dough and streusel recipe, we use low protein flour. All purpose flour is high protein flour which give the dough more compact effect and is less soft!
Baking time for these little pies are 45 to 50 minutes. It depends on your oven. We bake them in 45 minutes! When these little apple pies are ready, don’t remove the ring! The dough will break because of the oven heat! Let these pies cool off until room temperature! Be careful when you remove the ring! Cold pies are easy to work with and you can remove the ring easy!
When we bake these little apple pies in the morning, we remove the rings late in the afternoon! Also you can keep the pies in the refrigerator until use. We don’t put our pies in the freezer!
