  • 3/4 lbs Frozen cherries (DOLE optional)
  • 1 cup Extra fine granulated sugar
  • 1 tsp Amaretto liquor extract
  • 1 tbsp Fresh lemon juice

Amarena cherry preserves is an Italian type of Jam with sweet cherries. Amarena cherries are sweet with Amaretto liquor flavor. For this recipe you don´t need to cook with Amaretto liquor. There are Amaretto flavor extracts on the markets which makes this recipe easy to make! For Amarena cherry preserves you need frozen dark cherries. You can find these in the frozen section of your grocery store or search online. The brand DOLE has the perfect cherries for this recipe. You can combine these with Amarena cherries as well. This is optional. For this recipe you need a medium size pan with teflon, spatula and wooden spoon. When you recipe is ready, make sure you use sterilised jars! Amarena cherry preserves is a homemade sweetness recipe. Good for breakfast, brunch, high tea and baking recipes. This preserve is the darker the cherry, the sweeter the juice!

Amarena cherry preserves

  1. Defrost 3/4 lbs of frozen cherries and rinse them with water. Keep about 10 cherries on the side for extra garnishing.
  2. Put them in a Teflon medium sized pan with 1 cup of extra fine granulated sugar.
  3. Keep this on low fire and use a wooden spoon to stir the cherries with sugar until the sugar solves.
  4. Take it off the stove and use a stick blender. blend this for about 20 to 30 seconds. (Don’t mash the cherries! This preserve does not need extra fine structure)
  5. Blend the 10 extra cherries through the preserves.
  6. Put it back on the stove on medium fire and add Amaretto extract and lemon juice to the batch.
  7. Keep on stiring for about 3 to 4 minutes. Then your Amarena cherry preserve is ready!
  8. Use sterilised jars for the Amarena cherry preserves and let it cool off without the lith.
  9. When the preserves is on room temperature, you can close the jar with the lith and store in the refrigerator.
  10. Label your jar with a sticker and add the date of preparing. This recipe should be good for a month.
