Russian Olivier potatoe salad
One of the most famous potatoe salads are Russian Olivier potatoe salad. This salad is with cold potatoes, peas and carrots. Besides these main ingredients, there is alot more to add to this delicious salad. Most of the time when people make potatoe salad, you see a sticky salad. This is because the majority of the people don’t use cold potatoes. For any potatoe salad, it is important to use potatoe with starch and cook them dry!
After cooking potatoes, let them cool off until room temperature and never close the lid of the pan! When you close the lid, you will see your potatoes are moist! The last thing you want is wet potatoes. When you peel potatoes, you can cut them in small pieces before cooking or after cooking. My suggestion is to do this up front.
Peel 4 medium sized potatoes with starch and cut them in smaller parts. Cook them with 1/2 tsp of coarse salt. When potatoes are cooked, put them in a colander or strainer until room temperature. Keep the potatoes overnight in the refrigerator in a closed container.
Whisk 2 tbsp of mayonnaise with 2 tbsp with crème fraîche until creamy
Use a bowl and mix potatoes with other vegetables. 2 chopped green onions, 1 chopped shallot onion, 1 small can peas and carrots. Stir well until incorporated.
Add 2 tbsp capers, 3 pinches sea salt, 10 drops worcestershire sauce and 2 tbsp minced parsley and fresh grated pepper.
At last, mix the potatoes with all these ingredients with mayonnaise cream.
Your Russian Olivier patatoe salad is ready! Keep this in the refrigerator until use.
