Last month our catering service had a special request from our Local hospital. The theme was healthy lunch and it should be fingerfood! We have created red fruit party skewers with mozzarella cheese. We had to do everything in small portions for a diet group. Besides these fruit kebobs, we had lettuce, wraps and Vietnamese soup as well. These fruit skewers fit in any diet and are popular as wedding appetizers too! For this recipe we use blackberries, raspberries and melon. The twist is our marinaded mozzarella cheese in between!

This recipe is all about cleaning and cutting fruit neat and add a cube of mozzarella cheese! Make sure you dry clean berries with kitchen towel, because presentation is key! It doesn’t matter if this is for a healthy presentation or wedding. Skewers or fruit kebobs that look good, those are the popular appetizers!

Marinaded mozzarella

Marinaded mozzarella gives this vegetarian treat an extra bite! This type of cheese isn’t much when you only keep it standard the way it is. The 24 hour marinade based on olive oil, vinegar and herbs make these kebobs great! cut mozzarella into squares and marinade overnight! The next day it is time to make these skewers and they are ready to serve on any occasion! The combination is blackberry, raspberry and water melon. Also you can try these party skewers with other seasonal fruits like honeydew melon.

Red fruit party skewer appetizers

When we do catering, we are getting more request for making healthy appetizers! Most of the time people would like to eat fruits in the summer without meat. These fruit kebobs are also popular on holiday gatherings and cocktail hours. We always do a mix and match appetizer, so everyone can join. When people are on a diet or have a healthy lifestyle, everyone enjoy these fruit skewers. When you don’t like mozzarella, you can use as well other soft cheeses

    ingredients fruit skewers
  • 20 blackberries
  • 20 raspberries
  • 1/2 honeydew melon
  • 1/4 water melon
  • Marinaded mozzarella
  • 1/2 lbs (225 grams) block of mozzarella cheese or other soft cheese of choice
  • 6 tbsp Olive oil extra vierge
  • 2 tbsp red wine vinegar
  • 1/2 tsp of fresh grated sea salt
  • 1 tbsp lemonzest
  • 1 tsp mustard
  • 1 1/2 tbsp fine chopped parsley or chives

    Directions marinated mozzarella
  1. Cut a 1/2 lbs of mozzarella cheese or other soft cheese in 3/4 by 3/4 inch in squares.
  2. Make a marinade of 6 tbsp olive oil, 2 tbsp red wine vinegar, pinch salt, 1 tbsp lemon zest, 1 tsp of mustard and 1 1/2 tbsp fine chopped parsley or chives. Shake well and pour this over the cheese cubes. Put this in a container and let it stay overnight in the refrigerator.
  3. Making red fruit party skewers
  4. Clean blackberries and raspberries and dry them carefully with kitchen towel.
  5. Cut 1/4 of water melon and honeydew melon. Cut both melons in cubes/squares of 3/4 inch by 3/4 inch. Try to remove the seeds as well.
  6. Make skewers with each fruit. The 3rd on the skewers should be marinaded mozzarella cheese and finish this with another part of melon or berry.
  7. Serve these party fruit skewers on a nice platter and you are ready to serve!


Use Bamboo party skewers You can experiment with other fruit or cheese of choice. Use a vinaigrette shaker for marinade
