Last month our catering service had a special request from our Local hospital. The theme was healthy lunch and it should be fingerfood! We have created red fruit party skewers with mozzarella cheese. We had to do everything in small portions for a diet group. Besides these fruit kebobs, we had lettuce, wraps and Vietnamese soup as well. These fruit skewers fit in any diet and are popular as wedding appetizers too! For this recipe we use blackberries, raspberries and melon. The twist is our marinaded mozzarella cheese in between!
This recipe is all about cleaning and cutting fruit neat and add a cube of mozzarella cheese! Make sure you dry clean berries with kitchen towel, because presentation is key! It doesn’t matter if this is for a healthy presentation or wedding. Skewers or fruit kebobs that look good, those are the popular appetizers!
Marinaded mozzarella gives this vegetarian treat an extra bite! This type of cheese isn’t much when you only keep it standard the way it is. The 24 hour marinade based on olive oil, vinegar and herbs make these kebobs great! cut mozzarella into squares and marinade overnight! The next day it is time to make these skewers and they are ready to serve on any occasion! The combination is blackberry, raspberry and water melon. Also you can try these party skewers with other seasonal fruits like honeydew melon.
