Smokey salmon deviled eggs

During christmas and new years eve, our catering makes alot of deviled eggs. Smokey salmon deviled eggs are one of them. These eggs are special with a smokey flavor. We prepare smoked salmon in our deviled egg cream filling and we use this on top of the egg. When you love smoked salmon, this is the best holidays treat you can serve! For this recipe, we are using organic or omega 3 eggs. A good quality of egg is a must for this recipe!

Online you can see alot of instruction videos about how to boil a hard boiled egg? This is unnecessary, because they show these videos for two reasons! one is to cook eggs that won’t burst and second is the yolk part. Most of the time people cook eggs too short on the stove with the result of having half soft and hard egg yolks. For deviled eggs you need hard boiled eggs. For Smokey salmon deviled eggs it is important to have hard boiled eggs. Smoked salmon is juicy! For these type of deviled eggs, the filling must be dry!

For Smokey salmon deviled eggs we are smoking our own salmon. For this recipe we use Norwegian or Scottish salmon. We wash our salmon and marinade first. For this we use flaky salt, dill and lemon. During smoking we always use garlic too. This is the combination of our marinade. When you can’t smoke salmon, you can buy smoked salmon in the store. Please be careful when you buy this product! Most of the time smoked salmon isn’t smoked at all. Grocery stores sell smoked salmon with liquid smoke. This is a chemical which gives salmon a smokey flavor!

Before I start with the deviled egg cream, I seperate the egg yolks from the shells (egg white) and mash my salmon. Then I am using a food processor. For this recipe I am always using a shallot onion. these onions are small and have more flavor. I pulse egg yolks and a shallot onion first until minced. Then comes the smoked salmon and other ingredients. I pulse this too until creamy! Make sure you taste with a clean teaspoon first if the flavors are right. When you think it needs more sugar, mustard or worcestershire sauce, do this in little steps! When you don’t do this with care, your smokey salmon deviled eggs become over flavored.

When you serve Smokey deviled eggs on christmas day or new years eve, make sure they are cold. Serve them right from the refrigerator. They are better on flavor and when you have a party, they will stand for a couple hours on room temperature anyway! For garnishing, you can use flakes of smoked salmon, fresh dill and mayonnaise.   • 12 hard boiled eggs
  • 1 medium sized shallot onion or regular onion
  • ¼ tsp of white pepper
  • ¼ tsp of coarse salt
  • ½ tsp of Worcestershire sauce
  • 1 tsp of Dijon mustard
  • 2 tsp of granulated sugar
  • 3 ½ tbsp of Philadelphia creamcheese
  • ½ tbsp of mayonnaise
  • 7 tbsp of mashed smoked salmon
  • Fresh dill for garnishing
  • Mashed smoked salmon for garnishing
  • Mayonnaise for garnish (optional)

  1. Peel all eggs and cut them in half. Remove the egg yolks from the shells.
  2. Mash a piece of smoked salmon with a fork.
  3. Use a food processor and mince 1 shallot onion and all egg yolks together until minced. (You can pulse this too!)
  4. Add ½ tsp worcestershire sauce, ¼ tsp of white pepper, ¼ tsp of coarse salt, 1 tsp of Dijon mustard, 2 tsp of granulated sugar, 3 tbsp of Philadelpia cream cheese and ½ tbsp of mayonnaise to the batch and pulse this until creamy!
  5. Add 7 tbsp of mashed smoked salmon to the batch and pulse this until you see one smooth smoked salmon deviled egg cream.
  6. Use a piping bag with a nozzle and squeeze smoked salmon deviled egg cream into the egg shells.
  7. Garnish this with fresh dill, ½ tsp of mashed smoked salmon and mayonnaise on top. (see decoration style on our pin images online)
  8. Keep these eggs refrigerated until served


This recipe is good for 24 deviled eggs. * Use a food processor * Use a spatula * Use a piping bag with nozzle. * Use fresh smoked salmon.
